Last week, after nursing a particularly vindictive cold, I turned to my secret weapon…my all year round “feel better broth”. A super quick recipe of fresh or frozen sweetcorn, shrimp, spring onions, chili and Pak Choi simmered in some chicken or vegetable stock and fish sauce to taste. The nice thing about this soup is that you can just throw everything in a pan and leave it to simmer until the shrimps are cooked leaving you free to shuffle back to your sick bed. Aren’t I good to you! x

Looks good. What kind of mushrooms do you use? Shitake?
I used Chesnut mushrooms here but Shitake would be equally good. The nice thing about this recipe is that you can easily tweak ingredients to suit your larder! x
