All Day Quesadilla

Eh bien maintenant, I think it’s safe to assume I am having something of a “Mexican moment”. There is something about the humble Quesadilla which puts me in mind of the food of my childhood, super flavoursome but tactile and motherly if I can say that? Basically an inverted pizza (enfin presque) the various ways to fill a quesadilla are endless, believe me I know…I’ve tried.

I simply cannot get enough of the spicy yet homely flavours of Mexico! The other day I discovered a new branch of the restaurant chain Wahaca at the Southbank…it was all I could do to stop myself from setting up a small camp on site. Constructed from recycled shipping containers with an actual Tequilla Bar I may have found my Mexican shrine!
