
Nicoise Chickpea Pancakes
I finally got round to making Nina Parker’s Socca Pancakes. These gram or chickpea flour pancakes are super quick to whip up, incredibly filling and extremely versatile.
Nice has welcomed immigrants of Algerian and Tunisian descent over the years which I suspect may be the birthplace of this dish.
