Mostly Lovin’: It’s Achard Time!

I am super excited (yet again!), Christmas will soon be smothering us upon us. This is the time when my pickles and potions are created in time for the 25th. Of course the most important culinary accompaniment is my Mother’s Achard (a Mauritian spicy pickle of sorts). This year I have elected to make both the apple and mango varieties which are a fantastic accompaniment to the plethora of colds meats knocking around at this time of year. The attached image shows the base flavours of garlic, onion, mustard seed and chilies. By the 25th the Achard should reach maximum full flavour. I will post further pics of the finished product. x
